Seeing a slimy string like substance in your wine vinegars?

 

What you are seeing is not mold, it is the “mother” growing.

 

What it is, is a bacterium that grows when raw material in the vinegar did not finish fermenting. When your vinegar is not pasteurized this can leave behind this material and allow the mother to grow. This shows that the vinegar is raw and natural.

 

This does occur when the vinegar gets warmer, and it can be strained out. To avoid this, the items can be kept cool or in the fridge.
